Yummy Farmer's Market Salad Recipe

One of my favorite things about summer in Northeast Ohio is the wonderful farmer's markets that pop up all over town. Last weekend I came home with my bags (reusable, of course) full of fresh beautiful produce. Several ears of freshly picked sweet corn, heirloom tomatoes in various shade of orange, red and yellow, fresh basil, mild cubanelle peppers, (ever tried grilling these? Toss in olive oil and a little salt and pepper and grill until browned.....amazing!) sweet purple onions, leeks, shallots and a few varieties of crunchy cucumbers.
I was able to use a number of these items in this delicious marinated salad:

FARMER'S Market salad
Ingredients:
1 large cucumber seeded and sliced
1/4 cup chopped sweet onion
1 pint small heirloom tomatoes, halved
1/2 cup red wine vinegar

directions
1/2 cup extra virgin olive oil
small bunch of fresh basil leaves, washed and chopped
salt and pepper to taste

Toss cucumber slices and onion in red wine vinegar and allow to sit at room temperature for 1 hour. Add remaining ingredients and mix well.
Delicious served with small chunks of fresh mozzarella or feta cheese sprinkled on top.
